How I Cook Delicious Meals in My Small Camper Van: Breakfast, Snack, Lunch, and Dinner Ideas for Hikers and RV Travelers

Living the camper van life certainly has its obstacles, especially in the kitchen. With limited space, and only a microwave, convection stovetop, and gas grill at hand, I've learned to be resourceful in preparing delicious meals. Traveling to stunning hiking spots, I've sharpened my cooking skills and crafted easy, satisfying recipes for fellow RV travelers and campers. Here, I'm excited to share some of my favorite ideas for breakfast, snacks, lunch, and dinner that are perfect for those on the go.


Breakfast Ideas


1. Microwave Scrambled Eggs


Starting the day with a protein-rich breakfast is critical for fueling active hikes. My go-to is microwave scrambled eggs. Here’s the simple process I follow:


In a microwave-safe bowl, I whisk together two eggs, a splash of milk, a pinch of salt, and some pepper. I love to add diced vegetables such as bell peppers or spinach. In just 1-2 minutes of microwaving on high, stirring halfway, I have a warm, customizable meal. The best part? I can toss in cheese, cooked bacon bits, or any leftover veggies from last night's dinner, making it a flexible option.

2. Overnight Oats


When I need to get an early start on a hiking day, I prepare overnight oats. This is how I make it: in a mason jar, I combine 1/2 cup rolled oats, 1/2 cup milk, and various toppings like sliced bananas, a tablespoon of chia seeds, and a drizzle of honey. By morning, the oats have absorbed the liquid and are ready to eat—no cooking required! This dish is packed with fiber and energy, perfect for fueling busy adventures.


Snack Ideas


1. Trail Mix


Snacks play a crucial part in maintaining energy levels, especially while hiking. I often mix my own trail mix using a combination of nuts (like almonds and cashews), dried fruits (such as cranberries and apricots), and dark chocolate chunks. This portable snack is not just easy to prepare; it balances energy, protein, and antioxidants - an essential boost on the trails.


2. Grilled Veggies with Hummus


When at a campground with my gas grill, grilled veggies become a go-to snack. I chop bell peppers, zucchini, and mushrooms, toss them in olive oil along with salt, pepper, and garlic powder. Grilling them until tender creates a flavor-packed dish. Served with hummus for dipping, this snack is not just satisfying—it’s a healthy choice that feels indulgent.

Lunch Ideas


1. Pita Sandwiches


For lunch, pita sandwiches are a quick and nutritious option. I fill whole wheat pitas with a spread of cream cheese, fresh spinach, and sliced turkey or chicken. Sometimes I toss in cucumber or sprouts for that extra crunch. Not only are they easy to prepare, but they are also perfect to bring along on hikes.





2. Microwave Quinoa Bowl


Another excellent lunch idea is a microwave quinoa bowl. I mix together 1 cup of pre-cooked quinoa with 1/2 cup of black beans, 1/2 cup of corn, diced tomatoes, and 2 tablespoons of salsa in a microwave-safe container. After heating it for about 2-3 minutes, I like to top it with avocado slices or shredded cheese. This dish is not only nutritious but also full of flavor, making it an ideal camper meal.


Dinner Ideas


1. Gas Grill Fajitas


After an exhausting hiking day, a satisfying dinner is a must. Fajitas on the gas grill are one of my favorites. I marinate sliced chicken or beef in lime juice and garlic, grill it with sliced onions and bell peppers, then serve it all in warm tortillas with fresh avocado or salsa. This meal transforms dinner into a festive occasion—even in a small camper van.


2. Convection Stove Pasta


When I crave comfort food on a chilly, rainy day, I whip up a simple pasta dish using my convection stovetop. I cook pasta and toss it with sautéed garlic, a handful of spinach, cherry tomatoes, and a sprinkling of Parmesan cheese. This one-pot meal is quick, easy, and leaves minimal cleanup—essential in a small kitchen!
